Dan's Chili Recipe for cold weather
PREP: 30 min. COOK: 2-3 hours SERVINGS: 20
(if your going to make it - make it for many)
1 quart tomato sauce
1 28oz. can of diced tomatoes
2 quarts water
3 cans black beans
3 cans northern beans
1 cup chopped onions
1 1/2 cups red and green peppers
1 cup diced green chiles
1/3 cup beef consommé
1 tablespoon salt
1/2 tablespoon black pepper
2 tablespoons chili powder
2 tablespoons garlic powder
2 tablespoons cumin
1 1/3 tablespoons oregano
2 lbs. beef
Dan's Chile
1. Mix all ingredients into large pot (except for beef and 1/3 tablespoon of oregano). Bring the base chili to a boil and turn down heat to a simmer. Let cook uncovered for 2 to 3 hours.

2. After 1 1/2 hours - cook the beef with the 1/3 tablespoon of oregano (can be chopped steak or hamburger - your choice.). Drain when done and add to the base chili.

3. Let the chili cook for an additional 1/2 hour to 1 1/2 hours. The more time that the chili is cooking the thicker it becomes.
